Hide away from grey skies with this luxurious hot chocolate. We’ve added amaretto to this traditional French chocolat chaud, but any sweet liqueur will complement this indulgent drink made with 70% cocoa.

Amaretto Chocolat Chaud

500ml semi skimmed milk

100g dark chocolate minimum 70% cocoa, grated

Light brown sugar, to taste

Amaretto liqueur, to taste

Method

1. Gently the milk in a small, heavy based saucepan

2. When the milk is warm, whisk in the grated chocolate until melted. Continue heating the mixture until it begins to thicken just slightly, being careful not to boil it.

3. Add amaretto liqueur and brown sugar to taste, stirring on the heat to dissolve the sugar.

4. Divide the chocolat chaud between two cups, and serve.
